Dominica is a small, independently governed island in the southern Caribbean. This small island is lush, mountainous, and self sustaining. The people of Dominica lead a healthy life: walking and eating organically grown vegetables, fruit, and fresh fish.

3 T vegetable oil *Marinate fish in lemon juice, fresh herbs (parsley, thyme) and a little oil. (four or six ounces of fish per person) *Firm fish needs to be dusted in flour and precooked in a small amount of oil. If you are using salmon, cod, or another type of soft fish, add directly to the sauce. 1. Heat skillet, add oil, chopped seasonings and tomato. Stir briskly.
2. Add tomato sauce, water and worcestershire sauce. Simmer for about 5 minutes. 3. Add cumin and stir, continue to simmer for 2 minutes. Serve with rice and greens, tomatoes, avocado, and a simple vinaigrette. |
