Southern Cooking...

Charming, historic downtown Aiken, SC has an unexpected abundance of creative menus. Here are a few suggestions.

Cafe Rio Blanco is a small cozy spot on Laurens Street. Cuban fare is the specialty and Saturdays are special paella night, with a reservation. The owner/chef is friendly and accommodating.

The Pizza Joint has hand tossed dough crusts, with fresh ingredients. Perfect for casual dining or take out, making this "joint" very popular.

Maliaʼs is a fine dining experience. Fresh fish selections are featured and a beautifully braised lamb shank was yum! Fresh baked bread, choice of salads, choice of starch and a fresh vegetable are included with the entrees.

And my favorite...dinner at Judyʼs. Judy served Paula Deanʼs Hot Chicken Salad. Perfect for a large group. Serve with a salad and garlic bread...you will be a star!

hot chicken salad

2 c cooked chicken breast meat, cubed
1 c diced celery
1/2 c slivered almonds
1/2 t salt
1/2 t pepper
2 T fresh lemon juice
1 c mayonnaise
1 c grated sharp Cheddar
2/3 c crushed potato chips

Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with vegetable oil.
In a large mixing bowl combine the chicken, celery, almonds, salt, pepper, lemon juice, mayonnaise, and cheese. Place the mixture in the prepared baking dish. Spread the crushed potato chips on top. Bake for 20 minutes, or until bubbly. Serves 4-6 Recipe by Paula Dean
