red cabbage, shredded
1/2 c pecans or walnuts, coarsely chopped, toasted under broiler for 2-3 minutes
1 red or white onion, thinly sliced
6 ozs dates, pitted
1 large red apple, cubed
5 ozs swiss cheese, cubed
salt and pepper

dressing:
3 T olive oil
2 T whole-grain mustard
1 T honey
1 t white wine vinegar or lemon juice
salt and pepper
