To all who love making scalloped potatoes from scratch and potato salad but hate peeling the boiled potatoes, here is the solution for easy peeling. Well, we do learn something new every day.
I wish I had known this trick thirty years ago. Peeling the cooked potato was the least desirable part in making a potato salad. Very Cool. Enjoy.”

potatoes(boiled) 4-5 hard boiled eggs Miracle whip or Hellman’s mayonnaise 4-5 chopped sweet pickles pickle juice to taste chopped green pepper chopped green onions crisply fried bacon bits salt and pepper to taste paprika |
1 can pinto beans 1 -12 oz can whole kernel corn 1 c cooked potatoes, diced 5 green onions, chopped 5 T green chilis ½ t chili powder 1 t dried oregano 1 t Dijon mustard 1 T lemon juice ¼ c mayo (light) ¼ c sour cream (light) 2 T parsley, chopped Salt and ground pepper |
