New Ulm, Minnesota is referred to as the “City of Charm and Tradition.” Sixty five
percent of New Ulm's population has German ancestry, so we are sure that Marilyn's
German potato salad is authentic and generational.
Marilyn raised seven children on a family dairy farm, canning garden produce and
baking bread... six loaves, two to three times a week. The farm remains in the family, and celebrations include eleven grandchildren and three great-grandchildren, with one
more on the way.
Marilyn graciously shared a few of her family's treasured recipes. The family favorite for
seventy-five years is the scalloped potato recipe, which will be included next month.

Fry bacon until crisp. To bacon and drippings, add onion and saute until translucent( a couple of minutes). Add vinegar, water, salt and bring to a boil. In a separate jar, mix cornstarch and flour with a cup of warm water, shake until smooth and free of clumps. Gradually pour into bacon mixture, stirring constantly for a few minutes until thick and glossy. Add sugar and butter and dissolve. Pour over potatoes and marinate for 30 minutes, keep warm. |
