belly dancerThis is an ambitious menu with unusual spices and cooking techniques. When I gave the menu assignments out, I included the spices for the recipes. I ordered the spices easily on the internet, along with a clay tagine. www.zamourispices.com

The traditional tagine is formed of heavy clay, which is painted or glazed. It consists of two parts. A base unit which is flat and circular with low sides, and a large cone or dome-shaped cover that rests inside the base during cooking. The cover is designed to promote the return of all condensation to the bottom. With the cover removed, the base can be taken to the table for serving.

Morroccan cuisine
Night at the Kasbahtagine
Moroccan cooking uses cumin, ginger, saffron, and coriander, just to name a few of the spices.
Slow cooked stews,
simmered at low temperatures.

Seafood B’stila

Seafood b’stila is an ideal first course for dinner.  It could also be used for a luncheon main course.  Sea bass, mahimahi, and red snapper work well as a firm fleshed fish.

Sweet Potato Soup
with rosemary and pecans

Creamy and rich texture, with an unusual blend of spices.
Can easily be made ahead of time and reheated when needed.

Wine $ense

Dining out...ever notice how the bar cost portion is the same (or more) as the food portion?
I am always amazed, but reluctant to give up the bottle of wine with my meal.
Now, if you are willing to go out during the week, you can usually find 1/2 price wine nights at some of your favorite restaurants. I also suggest checking out the corkage fees. If it is $10.00, it may pay to bring your own wine to the restaurant.
These are a few samples of 1/2 price wine nights in the Minneapolis area.
