mashed sweet potatoes and ginger
Serves 8

Fresh cilantro, for garnish
2 1/2 pounds of peeled sweet potatoes, cut into chunks
1/4 cup butter
2 inch piece of fresh ginger, peeled, grated
2 tablespoons olive oil
salt and pepper
chopped fresh cilantro, for garnish
  1. Place the sweet potatoes in a pan of cold salted water. Bring to a boil. Cover and simmer over reduced heat until tender. (about 20 minutes) Drain well.
  2. Melt the butter in the pan and add the ginger. Soften for about 5 minutes. Return potatoes to the pan and add the olive oil. Mash and season to taste.
