the Finish Line
With the finish line in sight, we will witness history in the making. The four components of the race have been brilliantly executed by all the team members. With Team IV finishing well ahead of the field, it is a sweet victory for TEAM GOURMET!


Pear & Chocolate Brioche Pudding

 
  • softened butter for the dish
  • 11 ounce brioche, sliced
  • 5 ripe pears, peeled and sliced
  • 2 c light cream
  • 1 1/2 c milk
  • 3 /2 ounces bittersweet chocolate
  • 1/4 c superfine sugar, plus some for sprinkling
  • 3 large eggs
  1. Butter shallow baking dish. Alternate the pears and bread in the dish.
  2. Warm the cream and the milk over low heat. Chop the chocolate into small pieces and add to the warm mil mixture. Add the sugar and stir until the chocolate is melted. Do not boil.
  3. Whisk the eggs and add to the warm chocolate milk.
  4. Pour the warm mixture over the brioche and pears. Press down with a spatula. Make sure that the brioche is moistened. Allow to stand for 45 minutes.
  5. Heat the oven to 325 degrees.
  6. Sprinkle the pudding with a little extra sugar. Place the dish in a water bath, hot water coming to 1/2 way up the dish. Place in the oven and bake for 45 minutes until soft and golden.
